We are so in love with the roast chicken recipe from The Barefoot Contessa. It is easy, yummy, and provides 2 meals for our little family. It's so good that I'm making again tomorrow.... The only thing I have scrapped is the gravy recipe that comes along with it. It stinks! Her whole add some flour to the pan drippings just makes a gloppy mess. I've tried it twice. Just do whatever you normally do with chicken drippings to make gravy and you'll be much happier. But the chicken part is wonderful. I'll put the recipe on Five Hungry Girls.
